6-Stage Quality Control Protocol

Six checkpoints stand between a block of fruit and a sealed container. Each one produces a record, and the records travel with the lot.

Soil and water audit
STAGE 01

Soil and water audit

Irrigation water and soil are tested before the season starts, so the growing programme is set against known inputs rather than assumptions.

Pre-harvest residue check
STAGE 02

Pre-harvest residue check

Samples go to an independent ISO 17025 accredited laboratory before harvest is authorised, against the residue limits of the destination market.

Pre-cooling
STAGE 03

Pre-cooling

Field heat is removed on the same morning the fruit is picked. The shelf life a buyer never sees is lost in this window, not in transit.

Sorting and calibration
STAGE 04

Sorting and calibration

Grading for defects, colour uniformity and calibre, to the class and size band written into the contract.

IQF freezing
STAGE 05

IQF freezing

Individual quick freezing keeps pieces separate and cell walls intact, which is what prevents drip loss when the buyer thaws them.

Loading and reefer set-point
STAGE 06

Loading and reefer set-point

Containers are pre-cooled, set to the booked temperature and loaded lot by lot, with the loading record matched to the bill of lading.

DOCUMENTATION STATUS

Standards and documentation status

The dossier is organised around field, site and management-system requirements. Current certificate scope and supporting documents are verified for the requested programme before any document is released.

Farming operations, Beheira

Current scope and document verification required.

Covers how the crop is grown — plant protection programmes, water sources, worker welfare and record keeping at block level. It is the baseline most European retail technical teams open with.

BRCGS Food Safety

Processing and IQF freezing

Current scope and document verification required.

Audits the processing site itself: hygiene zoning, foreign-body control, HACCP, and the traceability exercise that has to reconcile a finished pallet back to a harvest date.

ISO 22000:2018

Cold store, packing and export management

Current scope and document verification required.

Ties the food safety controls into the management system, so the same procedures apply to storage, packing and the export documentation released with each shipment.

RESIDUE REQUIREMENTS

Pesticide Residue Limits (MRL) Management

Abou El Fotouh Farms operates pre-harvest interval (PHI) controls and an integrated pest management (IPM) programme. Export batches are sampled and sent to independent ISO/IEC 17025 accredited laboratories, tested against the residue limits in EU Regulation (EC) No 396/2005 and those of the destination market. The report for a given lot is available to the buyer on request.

TRACEABILITY

One lot, one record

Every export lot carries its own reference: the block it was picked from, the harvest date, the grading and freezing records, and the container it left in. When a buyer's technical team asks a question eighteen months later, the answer is a file rather than a recollection.
